Blooming in summer with yellower flowers, this coneflower is best used as a background plant that can form dense patches. Found naturally only in extreme north Florida and is used as a larval host for the silvery checkerspot in its native range. It attracts bees and butterfies, and its seeds are eaten by small birds.
Edible parts of the plant include: young spring shoots (can be pan-cooked); late spring/early summer you can blanch the leaves and stems whole, then chop, and cook in a pan; leaves from spring to late fall. The plant is also known as Sochan and is a staple in the Cherokee diet and is still enjoyed today. The flavor is slightly herbal and reminiscent of celery. The older the leaves, the stronger the flavor. It makes an excellent addition to salads, smoothies, and stir-fries.
