Perennial, comes back every year. Flowers attract pollinators. Tubers/rhizomes can grow and spread aggressively. The edible tubers have been eaten by many tribes, because of their high nutritional content and lack of starch. They have a mildly sweet, nutty flavor similar to water chestnuts or artichoke hearts. They can be eaten raw or cooked in soups, stews, stir-fries, or as a potato substitute.
