Duck Potatoes bloom in late spring to summer with clusters of white flowers. The edible tubers are harvested with a rake and taste similar to chestnuts or sweet corn. They can be roasted or made into flour, and absorb flavor well. They are also enjoyed by ducks. The flowers attract pollinators, and the fruits are eaten by birds and small wildlife.

Seminoles use it to treat shock after an alligator bite; some sources say by making a poultice out of the leaves, others say by gringing the roots.
